As you go by the different cities in Nicaragua, you'll find that each city has its own typical food. For example:
- Chinandega: pepenas (fried pork)
- León: quesillos (melted cheese with tortilla and boiled onions) and buñuelos (fried cassava)
- Masatepe: sopa de mondongo (cow soup, parts of it)
- Bluefields: rondon
- Somoto: rosquillas (corn bread)
- Granada: vigoron (fried pork with boiled cassava and cabbage...

One of the recipes and typical meals of our country of Nicaragua is Gallo Pinto (see picture to the left). This is prepared with beans and rice.
All families in Nicaragua eventually cook Gallo Pinto, to serve at breakfast or dinner. I think it's one of the most popular and easiest to prepare recipes.

Since its origin, the fundamental basis of Nicaraguan gastronomy has been corn. Corn, as an ingredient, has many different uses: lots of drinks are made from corn, such as Chicha and Pinol; as well main dishes such as Nacatamal, Indio Viejo, and Sopa de Albondiga; and snacks and sweets such as Atolillo and Perrereque.
