There’s a lot of pork and turkey, which are the two main proteins. The main starch is bread and usually corn paste. There’s not a huge amount of root vegetables here in Yucatan.  You can get them but they’re imported. There are also fresh fruits, lots of fish, but not much in the way of salads. 
 
So basically, here in Yucatan, the food consists of plenty of protein and starch, but there’s not a huge amount of vegetable and salad type stuff. In the Yucatan peninsula there’s not a great deal of soil, so certain things grow really well here but a lot don’t. If you go south, you can get into some beautiful growing environments.

Mexicans have wonderful pork dishes and wonderful chilies, great salsas and sauces. I find the cheeses are boring because they are mild, but they're wonderful to take the heat off some of the Mexican dishes. They have rice and the variety of beans is staggering. Mexicans use different herbs and spices in their dishes. Mexican cuisine uses much more fat and oils as opposed to other cuisines. Mexican food is really comfort food at its best.

Sample of Mexican cuisine – Best Places In The World To Retire – International LivingFor me, the Mexican food and cuisine is the best! Mexican cuisine is very famous. It has been included in UNESCO’s Cultural Heritage of Humanity for five years now, since 2010. Mexican cuisine has been conserved, especially in Oaxaca.

Mexicans love food. Eating is part of their culture. They have big breakfasts, big lunches, and big dinners. To give you some contrast, in Holland, where I’m from, we work during lunchtime. We have a quick bite like a sandwich or something simple and then continue working. In Mexico, people eat for one to two hours. This is also how they spend time with their families.
 
Mexican cuisine has different kinds of vegetables and fruits. The fruits are tropical and some of them I never heard nor tasted them when I was in Europe. People eat meat and fish, and today you will also find delicious vegetarian dishes. Mexican cuisine, is very rich. Still in many houses, the wives and mothers still spend hours in the kitchen to make food the same way they have made it for generations. 
 
 Because the kitchen in Oaxaca is very rich and is an important cultural heritage, many people come here to take cooking classes. We offer two kinds of cooking classes. One is with a professional chef in Oaxaca and the other one is with a lady in a small village outside Oaxaca. Both classes start with a market tour where we explain about the local products. The classes are small and personalized and made for people who enjoy cooking and learning about new cultures.
